Description

The fame of Campofilone is indissolubly linked to its Maccheroncini, very thin egg pasta mentioned in a document from the Abbey in the 1400s as “finest fine maccheroncini”.

The recipe, passed down from generation to generation, requires few essential ingredients: soft wheat flour and fresh eggs, with no added water. The dough is worked by hand, rolled into very thin sheets, rolled up, and cut into thin strands, then carefully laid out on sheets of paper for drying. An ancient gesture, born from the peasant wisdom of making the best use of the eggs produced in the homes, which still lives on today in the artisanal productions of the village.

Refined, golden, and very light, the Maccheroncini di Campofilone have received IGP recognition and represent one of the most identity-rich culinary excellences of the Marche. Every year, in the first decade of August, the National Festival of Maccheroncini di Campofilone celebrates this tradition with tastings, music, and conviviality, transforming the streets of the village into a grand narrative of Marche flavors.
